Everything we have been able to accomplish in the last two years was possible because you have been willing to work for it and organize for it.
And every time we face a setback, or when progress doesn't happen as quickly as we would like, we know that you'll be right there with us, ready to fight another day.
So I want to thank you -- for everything.

How to make it

FOR THE BOTTOM LAYER: Adjust oven rack to middle position and heat oven to 325 degrees. Butter bottom and sides of 91/2-inch spring form pan. Melt butter, chocolate, and espresso powder in large heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring occasionally until smooth. Remove from heat and cool mixture slightly, about 5 minutes. Whisk in vanilla and egg yolks; set aside.
In stand mixer fitted with whisk attachment, beat egg whites and salt at medium speed until frothy, about 30 seconds. Add half of brown sugar and beat until combined, about 15 seconds. Add remaining brown sugar and beat at high speed until soft peaks form when whisk is lifted, about 1 minute longer, scraping down sides halfway through. Using whisk, fold one-third of beaten egg whites into chocolate mixture to lighten. Using rubber spatula, fold in remaining egg whites until no white streaks remain. Carefully transfer batter to prepared springform pan, gently smoothing top with offset spatula.
Bake until cake has risen, is firm around edges, and center has just set but is still soft (center of cake will spring back after pressing gently with finger), 13 to 18 minutes. Transfer cake to wire rack to cool completely, about 1 hour. (Cake will collapse as it cools.) Do not remove cake from pan.
FOR THE MIDDLE LAYER: Combine cocoa powder and hot water in small bowl; set aside. Melt chocolate in large heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring occasionally until smooth. Remove from heat and cool slightly, 2 to 5 minutes.
In clean bowl of stand mixer fitted with whisk attachment, whip cream, granulated sugar, and salt at medium speed until mixture begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, 15 to 60 seconds.
Whisk cocoa powder mixture into melted chocolate until smooth. Using whisk, fold one-third of whipped cream into chocolate mixture to lighten. Using rubber spatula, fold in remaining whipped cream until no white streaks remain. Spoon mousse into springform pan over cooled cake and gently tap pan on counter 3 times to remove any large air bubbles; gently smooth top with offset spatula. Wipe inside edge of pan with damp cloth to remove any drips. Refrigerate cake at least 15 minutes while preparing top layer.
FOR THE TOP LAYER: In small bowl, sprinkle gelatin over water; let stand at least 5 minutes. Place white chocolate in medium bowl. Bring ½ cup cream to simmer in small saucepan over medium-high heat. Remove from heat; add gelatin mixture and stir until fully dissolved. Pour cream mixture over white chocolate and whisk until chocolate is melted and mixture is smooth, about 30 seconds. Cool to room temperature, stirring occasionally, 5 to 8 minutes (mixture will thicken slightly).
In clean bowl of stand mixer fitted with whisk attachment, whip remaining cup cream at medium speed until it begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, 15 to 60 seconds. Using whisk, fold one-third of whipped cream into white chocolate mixture to lighten. Using rubber spatula, fold remaining whipped cream into white chocolate mixture until no white streaks remain. Spoon white chocolate mousse into pan over middle layer. Smooth top with offset spatula. Return cake to refrigerator and chill until set, at least 2½ hours.

RASPBERRY CAKE(White Choco)

Ingredients

1 pkg. (6 squares) BAKER'S Premium White baking chocolate, chopped shopping list
1/2 cup (1 stick) butter or margarine shopping list
1 pkg. (2-layer size) white cake mix shopping list
1 cup milk shopping list

1 tsp. vanilla shopping list
2 Tbsp. seedless raspberry jam shopping list
1 cup raspberries shopping list
White Chocolate-cream cheese frosting (recipe at the end) shopping list
1 pkg. (8 oz.) PHILADELPHIA cream cheese, softened shopping list
1/4 cup (1/2 stick) butter or margarine, softened shopping list
1 pkg. (6 squares) BAKER'S Premium White baking chocolate, melted, cooled slightly shopping list
1 tsp. vanilla shopping list
2 cups powdered sugar shopping list
How to make it
--------------------------------------------------------------------------------
Preheat oven to 350°F. Grease and flour 2 (9-inch) round cake pans; set aside. Microwave chocolate and butter in medium microwavable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted; cool slightly.
Beat cake mix, milk, eggs, vanilla and chocolate mixture in large bowl with electric mixer on low speed just until moistened. Beat on medium speed 2 minutes or until well blended. Pour evenly into prepared pans.
Bake25 to 28 minutes or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 minutes; remove from pans. Cool completely on wire racks.
TO MAKE THE FROSTING
Beat cream cheese and butter in large bowl with electric mixer on medium speed until well blended. Add melted chocolate and vanilla; mix well.
Add sugar gradually, beating until light and fluffy after each addition.
TO ASSEMBLE THE CAKE
Place 1 cake layer on serving plate; spread with layers of 2/3 cup of the White Chocolate-Cream Cheese Frosting and the jam. Cover with remaining cake layer. Frost top and side of cake with remaining frosting. Top with raspberries just before serving. Store in refrigerator.

TO SERVE: If using, garnish top of cake with chocolate curls or dust with cocoa. Run thin knife between cake and side of springform pan; remove side of pan. Run cleaned knife along outside of cake to smooth sides. Cut into slices and serve.See More

George Palaganas GINGER CARROT SOUP
Ingredients
2 tablespoons sweet cream butter

2 onions, peeled and chopped
6 cups chicken broth
...2 pounds carrots, peeled and sliced
2 tablespoons grated fresh ginger
1 cup whipping cream
Salt and white pepper
Sour cream
Parsley sprigs, for garnish
Directions
In a 6-quart pan, over medium high heat, add butter and onions and cook, stirring often, until onions are limp. Add broth, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender when pierced.

Remove from heat and transfer to a blender. Don't fill the blender more than half way, do it in batches if you have to. Cover the blender and then hold a kitchen towel over the top of the blender*. Be careful when blending hot liquids as the mixture can spurt out of the blender. Pulse the blender to start it and then puree until smooth. Return to the pan and add cream, stir over high heat until hot. For a smoother flavor bring soup to a boil, add salt and pepper, to taste.

Ladle into bowls and garnish with dollop sour cream and parsley sprigs.

*When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.See More

Spaghetti and meatballs with a homemade sauce.
Ingredients:

•Meatballs:
•2 eggs
...•1/2 cup milk
•3 slices bread, crumbled
•2 pounds lean ground beef
•1/2 cup finely chopped onion
•2 tablespoons chopped parsley
•1 clove garlic, smashed, minced
•1 teaspoon salt
•1/2 teaspoon pepper

•Sauce:
•3 tablespoons olive oil
•1/2 cup chopped onion
•2 cloves garlic, smashed and minced
•1 tablespoon sugar
•2 teaspoons salt
•1 teaspoon dried leaf oregano
•1/2 teaspoon dried leaf basil
•1/4 teaspoon black pepper
•1 large can (28 to 36 ounces total) crushed Italian tomatoes
•2 cans (6 ounces each) tomato paste
•16 ounces thin spaghetti
•Parmesan cheese
Preparation:
Recipe for spaghetti and meatballs
Make meatballs. In a medium bowl, beat eggs lightly; add milk and bread and let stand for about 5 minutes. Add ground beef, onion, parsley, garlic, salt, and pepper; mix gently until well blended. Shape into about 24 meatballs, about 1 1/2 inches in diameter. Place meatballs in a generously greased large shallow baking pan. Bake meatballs at 450° for 25 minutes.
In a Dutch oven, in hot oil over medium heat, sauté onion until tender and just begins to turn golden. Add remaining sauce ingredients; bring to a boil. Reduce heat, cover, and simmer for 30 minutes. Taste and adjust seasoning, adding more salt, if necessary. Add meatballs; cover and simmer 50 to 60 minutes longer, stirring from time to time.

Cook spaghetti according to package directions; drain.

Serve spaghetti topped with meatballs in sauce; sprinkle with grated Parmesan cheese.

eat grill to medium-high or preheat the broiler.

2. Combine Cheddar and Gruyere in a small bowl.

3. Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.

4. To grill: Lightly oil the grill rack (see Tip). Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook or they'll split open and the cheese will ooze out.) To broil: Cover a broiler pan with foil and coat with cooking spray. George Palaganas Buttermilk Choco CHIP Pancakes
Ingredients
1 cup all-purpose, unbleached flour

1 teaspoon baking powder
½ teaspoon baking soda

¼ teaspoon salt
1 egg
1 cup buttermilk
chocolate chips
We pre-heat the griddle to 375 degrees.
In a small bowl, we combine the dry ingredients and mix them well.

In a medium-sized bowl, we beat the egg slightly with a fork. We add the buttermilk and stir until combined. We add the dry ingredients to the egg-buttermilk mixture and stir with a wooden spoon until just combined. We leave some small lumps in the batter so that we don’t overmix the batter.

We spoon 1/4 cup of the batter onto the griddle for each pancake. For those pancakes that will become chocolate chip pancakes, we immediately distribute the chocolate chips in the batter before it begins to get heated.

When the edge of the pancakes begin to harden (the bubbles that form in the batter no longer disappear), we flip the pancakes. We cook the opposite side for about another minute and serve immediately.See More

Ingredients
8 Vienna all-beef hot dogs

2 pounds Idaho potatoes, unpeeled and straight cut (3 inches long by 1/2-inch thick)
8 hot dog buns with poppy seeds
...1 cup minced onions
1 cup brunoise fresh tomatoes, seeded
1 cup yellow mustard
1 cup sweet pickle relish
Sport peppers, to taste
Celery salt, to taste
Directions
Preheat the fryer. Fill a stock pot 3/4 of the way full with water and bring to a boil. Add the hot dogs, reduce the heat to a simmer and cover. Cook until the hot dogs are plump, about 6 to 8 minutes. Fry the potatoes until golden brown, about 4 to 6 minutes, stirring occasionally for even browning. Remove and drain on paper towels. Season with salt and pepper. Place the hot dogs in the buns. Start topping the hot dogs with 2 tablespoons of each: onions, tomatoes, mustard and relish. Top with sport peppers to taste and sprinkle a little celery salt on top. Place each hot dog in the center of a piece of deli wrap. Place the fries next to the hot dog. Ingredients
3 pounds peeled baking potatoes, cut into 1/4-inch-thick strips

4 teaspoons vegetable oil
3/4 teaspoon salt

8 garlic cloves, minced (about 5 teaspoons)
2 tablespoons finely chopped fresh parsley
2 tablespoons freshly grated Parmesan cheese
Preparation
Preheat oven to 400°.

Combine first 3 ingredients in a large zip-top plastic bag, tossing to coat.

Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 400° for 50 minutes or until potatoes are tender and golden brown, turning after 20 minutes.

Place butter and garlic in a large nonstick skillet; cook over low heat 2 minutes, stirring constantly. Add potatoes, parsley, and cheese to pan; toss to coat. Serve immediately.See More

For this waffle recipe you will need: 4 ounces of all purpose flour, 4 ounces of whole-wheat flour, one tablespoon of sugar, 2 teaspoons of baking powder, some salt, three eggs, one and a half cup of milk, ...and some

How to make a waffle in five easy steps:
1. Put all the dry ingredients (flour, sugar, baking powder, and salt) into one bowl.
2. Put all the wet ingredients (eggs, milk, and oil) into another bowl and beat, mix, shake, stir until the eggs and milk become one.
3. Pour the mix you've just made into the bowl with dry stuff and mix again, until there are no lumps left.
4. Now put half cup of batter you made in the waffle iron. It would be a good idea to have the waffle iron hot and ready if you are really hungry like us. Or you can wait for it to warm up since the batter can rest for a while anyways and even tastes better if it does (little secrets).

• 1/2 teaspoon black pepper
• 6 slices peppered bacon slices

Best Meatloaf Directions

Turn oven on to 350 degrees.

Combine all ingredients, except bacon, in a large mixing bowl. Use your hands to mix the ingredients well. Only mix until all ingredients are evenly distribute or your meatloaf may become too dense.

Line a pie plate or baking sheet that has sides with foil and spoon the meatloaf mixture onto the foil. Shape into a loaf and cover with the peppered bacon slices.

Bake for approximately 1 and 1/2 hours. You should cook your meatloaf to an internal temperature of 170 degrees.

You may choose to serve the meatloaf with just the bacon on top or you may want to try this mushroom sauce for the meatloaf recipe. You can make it while the meatloaf is cooking.

Mushroom Sauce for Meatloaf Recipes

• 1 and 1/2 cups canned beef gravy (or your own recipe)
• 1 tablespoon chopped shallots
• 1/4 pound mushrooms finely chopped, I prefer baby portobellas for this sauce
• 3 tablespoons butter
• 1 teaspoon lemon juice

In a frying pan, cook the shallots and mushrooms in the 3 tablespoons of butter for 5 minutes, stirring occasionally. Add the lemon juice and gravy. Bring to a boil while stirring and serve while hot.See More

This early, I am receiving feedbacks on the title being so "SLANG" in form aside from being too long. Another suggested shortening it to Black Eels For Dinner

but instead of focusing on the Menu, the rhetorical question poised actually is a rephrase for "What brought you here, really? " so I might settle for the retitle as

Notable Notes: The Elkins Mansion literally sits on top of a giant stone. The 3 decks 30 window mansion was once the home of Jesuits in Quink. The setting is Mid-Summer(Solstice) when nighttime doesn't fall until almost midnight or about 9 pm. Lady Baumgarten went to the occassion wearing Victorian dresses from Olays. Rebecca Heiss was invited to play the cello. The event is all day and the new Lady or Lord of Elkins mansion to whom the estate is bequested is not announced until after dinner.

Helicanus: You'll show your naked butt if you ldon't hold still!(Still tinkering on the tablet! The big screen shows SECRET DECODED!)

Harry: YES!Ha.Hah.ha.(Sideswiping the hanging computer tablet he had selected and occupies center stage)            Do you know how lucky you are?
